Eggs Disguised as Waffles

Since going gluten free, dairy free, and mostly grain free about a year ago my breakfast routine has become well, pretty routine. My first meal of the day usually consists of eggs, berries, and black coffee. Now I'm a fan of routine, a big fan, but today I decided to mix it up and try a paleo waffle recipe.

You ready for the ingredient list? Got a pen handy? One banana, two whole eggs, and 1/2 tsp cinnamon. That's it! SUPER simple. Just blend all of the ingredients together until they are well combined and have doubled in volume and pour into a hot waffle iron. 

This was my first attempt and I was pretty pleased with the results. The finished waffles were a little bit more delicate and tricky to remove from the waffle iron but oh so tasty. These are best served straight out of the waffle iron, topped with fresh berries and drizzled with maple syrup or agave syrup - whatever floats your boat. Next time I'm going to experiment with adding vanilla for additional flavor.

Update - Made these again today, because well, waffles and tweaked the recipe just a bit and they were even better! 1 banana, 2 eggs, 1/4 tsp cinnamon, 1/8 tsp vanilla, and a small pinch of salt. You won't be sorry ;)
